Ingredients
- 8 large sea scallops (about 1 lb), side muscle removed
- 8 slices thin-cut bacon, cut in half crosswise
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 (6-inch) wooden skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper. Pat scallops dry and toss with the marinade. Let sit for 10 minutes.
- Preheat grill to medium-high heat (about 400°F).
- Wrap each scallop with a half slice of bacon and thread onto a skewer. Secure bacon by piercing through the ends.
- Grill skewers for 3-4 minutes per side, until bacon is crispy and scallops are opaque and just cooked through.
- Remove from grill and serve immediately.
Tips
- Soak wooden skewers for at least 30 minutes to prevent burning.
- Pat scallops very dry before marinating to ensure a good sear.
- Use thick-cut bacon for better wrapping and less shrinkage.
