Ingredients
1/2 cup rolled oats
1 cup water or low-sodium broth
1/4 teaspoon salt
1 large egg
1 teaspoon vegetable oil
1 teaspoon soy sauce (or tamari for gluten-free)
1/2 teaspoon sesame oil (optional)
1 green onion, thinly sliced (optional)
1/4 teaspoon toasted sesame seeds (optional)
Instructions
In a small saucepan, combine oats, water or broth, and salt. Bring to a boil over medium-high heat, then reduce heat to low and simmer, stirring occasionally, until oats are tender and porridge is thick, about 5 minutes.
While oatmeal cooks, heat vegetable oil in a nonstick skillet over medium-high heat. Crack the egg into the skillet and fry until the white is set and edges are crispy, about 2-3 minutes for sunny-side up, or flip for over-easy.
Pour the cooked oatmeal into a bowl. Drizzle with soy sauce and sesame oil (if using). Top with the fried egg.
Garnish with sliced green onion and sesame seeds if desired. Serve immediately.
Tips
For extra flavor, use chicken or vegetable broth instead of water.
