Ingredients
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 large yellow onion, thinly sliced
- 1 pound cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1 tablespoon dry sherry or white wine (optional)
Instructions
- Heat butter and olive oil in a large skillet over medium-high heat until butter is melted and foaming.
- Add sliced onion and cook, stirring occasionally, until softened and lightly browned, about 5-7 minutes.
- Add mushrooms and spread in an even layer. Cook without stirring for 3 minutes to allow browning.
- Stir mushrooms and continue cooking until they release their liquid and it evaporates, about 5 minutes.
- Add garlic, salt, pepper, and thyme; cook for 1 minute until fragrant.
- If using, add sherry or wine and cook for 30 seconds, scraping up any browned bits.
- Taste and adjust seasoning. Serve hot.
Tips
- For deeper flavor, use a mix of mushroom varieties like shiitake and oyster.
- Serve over grilled steak, burgers, or toss with pasta and Parmesan.
- Leftovers can be refrigerated for up to 3 days and reheated in a skillet.
