Ingredients
1 lb fresh green beans, trimmed
3 tbsp olive oil
4 cloves garlic, thinly sliced
1/2 tsp salt
1/4 tsp black pepper
1 tbsp lemon juice (optional)
Instructions
Bring a large pot of salted water to a boil. Add green beans and blanch for 2 minutes. Drain and immediately transfer to a bowl of ice water to stop cooking. Drain well and pat dry.
In a large skillet, heat olive oil over medium heat. Add garlic slices and cook, stirring frequently, until golden and fragrant, about 1-2 minutes. Be careful not to burn.
Add green beans to the skillet. Season with salt and pepper. Sauté, tossing occasionally, until beans are heated through and slightly charred in spots, about 4-5 minutes.
Remove from heat. If desired, drizzle with lemon juice and toss. Serve immediately.
Tips
For extra crunch, add a tablespoon of toasted almonds or pine nuts.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet.
