Ingredients
4 pork sausages (bangers)
1 tbsp olive oil
1 large onion, thinly sliced
1 tsp brown sugar
1 tbsp balsamic vinegar
2 soft bread rolls (e.g., brioche or ciabatta)
2 tbsp butter, softened
2 tsp Dijon mustard or brown sauce (optional)
Salt and pepper to taste
Instructions
Heat olive oil in a frying pan over medium heat. Add sausages and cook, turning occasionally, until browned and cooked through (about 10-12 minutes). Remove and keep warm.
In the same pan, add sliced onion and cook over medium heat, stirring occasionally, until softened and golden, about 5-7 minutes. Sprinkle with brown sugar and balsamic vinegar, stir, and cook for 1 more minute. Season with salt and pepper.
Split the rolls and spread with butter. Toast lightly in a dry pan or under the broiler if desired.
Spread mustard or brown sauce on the bottom half of each roll (if using). Place two sausages in each roll, top with caramelized onions, and cover with the top half of the roll.
Serve immediately.

For extra flavor, add a slice of cheese (like cheddar) on top of the sausages before adding onions.
