Ingredients
1 tablespoon olive oil
4 sweet Italian sausages (about 1 lb)
2 bell peppers (red and green), sliced into strips
1 large onion, sliced
2 cloves garlic, minced
1/2 teaspoon dried oregano
Salt and black pepper to taste
4 crusty sub rolls, split
Optional: 4 slices provolone cheese
Instructions
Heat olive oil in a large skillet over medium heat. Add sausages and cook, turning occasionally, until browned on all sides, about 8 minutes. Remove sausages to a plate.
In the same skillet, add peppers and onions. Cook, stirring occasionally, until softened and beginning to brown, about 8 minutes. Add garlic and oregano; cook 1 minute more.
Return sausages to the skillet. Add 1/4 cup water, cover, and cook until sausages are cooked through (internal temp 160°F), about 5 minutes. Uncover and cook until liquid evaporates.
If using cheese, preheat broiler. Place split rolls on a baking sheet, cut side up. Broil until lightly toasted, about 1 minute.
Place a sausage on each roll. Top with pepper-onion mixture. If using cheese, place a slice on top and broil until melted, about 30 seconds. Serve immediately.
Tips
Use hot Italian sausages for a spicier version.
Leftover filling can be refrigerated for up to 3 days; reheat in a skillet.
To make ahead, cook sausages and vegetables, then assemble and broil just before serving.
