Ingredients
1 English muffin, split
1 frozen sausage patty (or homemade, 2 oz)
1 large egg
1 slice American cheese
1 tablespoon butter, softened
Salt and pepper to taste
Instructions
Cook the sausage patty according to package directions (or in a skillet over medium heat for 4-5 minutes per side until browned and cooked through). Keep warm.
While the sausage cooks, toast the English muffin halves in a toaster or under the broiler until lightly golden. Spread butter on the cut sides.
In a small nonstick skillet over medium heat, melt a little butter. Crack the egg into the skillet, breaking the yolk gently. Season with salt and pepper. Cook until the white is set but the yolk is still runny, about 2-3 minutes. If desired, flip and cook for 30 seconds more for a firmer yolk.
Assemble the sandwich: Place the cooked sausage patty on the bottom half of the English muffin. Top with the cooked egg and a slice of American cheese. Cover with the top half of the muffin.
Serve immediately.
