A homemade version of the fast-food favorite, featuring a savory sausage patty sandwiched between fluffy, syrup-infused griddle cakes.

Ingredients
1 lb ground pork sausage
2 cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups buttermilk
1 large egg
2 tbsp melted butter
2 tbsp maple syrup (for batter)
4 slices American cheese
Additional maple syrup for serving
Instructions
Divide the sausage into 4 equal portions and shape into thin patties slightly larger than the size of the griddle cakes (they shrink when cooked).
Cook the sausage patties in a large skillet over medium heat until browned and cooked through, about 4 minutes per side. Drain on paper towels and set aside.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together buttermilk, egg, melted butter, and 2 tablespoons maple syrup.
Pour the wet ingredients into the dry ingredients and stir until just combined (lumps are okay).
Heat a griddle or non-stick pan over medium heat and lightly grease with butter or oil.
For each griddle cake, pour about 1/4 cup of batter onto the griddle. Cook until bubbles form on the surface and edges look set, about 2 minutes, then flip and cook another 1-2 minutes. You should have 8 griddle cakes.
To assemble: Place a slice of cheese on a sausage patty, then sandwich between two griddle cakes. Serve warm with extra maple syrup for dipping.
Tips
For a more authentic flavor, use pure maple syrup rather than pancake syrup.
Leftover griddle cakes can be frozen and reheated in a toaster.
