Ingredients
4 frozen or refrigerated buttermilk biscuits (or homemade)
4 sausage patties (about 3 oz each)
4 large eggs
4 slices cheddar cheese
1 tablespoon butter
Salt and black pepper to taste
Instructions
Preheat oven and bake biscuits according to package directions (or prepare homemade biscuits).
While biscuits bake, cook sausage patties in a large skillet over medium heat until browned and cooked through, about 4 minutes per side. Transfer to a plate and keep warm.
In the same skillet, melt butter over medium heat. Crack eggs into the skillet and cook to desired doneness (sunny-side up or over-easy, about 3 minutes). Season with salt and pepper.
Split warm biscuits in half. Place a slice of cheese on the bottom half, then add a sausage patty and a fried egg. Top with the other biscuit half.
Serve immediately.
Tips
For extra flavor, add a drizzle of hot sauce or a slice of tomato.
To make ahead, assemble sandwiches and wrap in foil; reheat in a 350°F oven for 10 minutes.
Use sharp cheddar or pepper jack for a different taste.
