Ingredients
1 English muffin, split
2 breakfast sausage links (or 1 patty), casings removed if using links
1 large egg
1 slice American cheese
1 tablespoon butter, softened
Salt and pepper to taste
Instructions
Form the sausage into a thin patty slightly larger than the English muffin. Cook in a non-stick skillet over medium-high heat until browned and cooked through, about 3-4 minutes per side. Transfer to a plate and keep warm.
Reduce heat to medium. Crack the egg into the skillet and cook to your liking (sunny-side up or flipped for over-easy), seasoning with salt and pepper. For a round egg that fits the muffin, use a ring mold or cook the egg and trim edges.
While the egg cooks, toast the English muffin halves. Spread butter on cut sides.
Assemble: Place the sausage patty on the bottom muffin half, top with the cooked egg, then a slice of cheese. Place the top muffin half on the cheese. Serve immediately.
Tips
For a less greasy sandwich, cook the sausage first and drain excess fat before cooking the egg.
To make ahead, assemble and wrap in foil; reheat in a 350°F oven for 10 minutes.
