Ingredients
1 tbsp olive oil
1 lb smoked sausage, sliced into rounds
1 large onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
3 cups frozen diced potatoes (or 2 large potatoes, peeled and diced)
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
2 cups fresh spinach
Instructions
Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned, about 5 minutes. Remove sausage with a slotted spoon and set aside.
In the same skillet, add onion and bell pepper. Cook until softened, about 4 minutes. Add garlic and cook for 1 minute.
Add diced potatoes, paprika, salt, and pepper. Cook, stirring occasionally, until potatoes are golden and tender, about 15 minutes.
Return sausage to the skillet. Add spinach and cook until wilted, about 2 minutes. Serve hot.
Tips
For extra crispiness, cook potatoes without stirring for the first 5 minutes.
Serve with fried eggs or ketchup on the side.
