Ingredients
6 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
8 ounces Italian sausage, casings removed
1 small onion, diced
1 red bell pepper, diced
2 cups fresh spinach
1/2 cup shredded mozzarella cheese
Instructions
Preheat oven to 375°F (190°C). In a medium bowl, whisk together eggs, milk, salt, and pepper; set aside.
Heat olive oil in a 10-inch oven-safe skillet over medium-high heat. Add sausage and cook, breaking it up, until browned, about 5 minutes. Transfer to a plate.
In the same skillet, add onion and bell pepper; cook until softened, about 4 minutes. Add spinach and cook until wilted, about 1 minute.
Return sausage to the skillet and spread evenly. Pour egg mixture over the top. Sprinkle with mozzarella.
Cook on stovetop over medium heat for 3 minutes, until edges are set. Transfer skillet to oven and bake until center is set, about 12-15 minutes.
Let cool for 5 minutes, then slice and serve.
Tips
For a vegetarian version, omit sausage and add 1 cup of diced mushrooms or zucchini.
