  2. Heat olive oil in a skillet over medium heat. Add onion, salt, and pepper; cook, stirring occasionally, until caramelized, about 15 minutes. Transfer to a bowl.
  3. In the same skillet, cook sausage over medium-high heat, breaking it up, until browned and cooked through, about 5 minutes. Drain excess fat. Add to the onions and let cool slightly.
  4. Stir mozzarella, ricotta, Parmesan, and parsley into the sausage-onion mixture.
  5. Divide pizza dough into 4 equal pieces. On a floured surface, roll each piece into an 8-inch circle.
  6. Place 1/4 of the filling on one half of each dough circle, leaving a 1-inch border. Brush edges with beaten egg, then fold dough over filling and press edges to seal. Crimp with a fork.
  7. Place calzones on prepared baking sheet. Brush tops with remaining beaten egg and cut a few small slits for steam vents.
  8. Bake until golden brown, about 15-18 minutes. Let cool for 5 minutes before serving.
