Ingredients
1 lb pizza dough, store-bought or homemade
1 tbsp olive oil
1 large onion, thinly sliced
1/2 tsp salt
1/4 tsp black pepper
1/2 lb Italian sausage, casings removed
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 tbsp chopped fresh parsley
1 egg, beaten (for egg wash)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Heat olive oil in a skillet over medium heat. Add onion, salt, and pepper; cook, stirring occasionally, until caramelized, about 15 minutes. Transfer to a bowl.
In the same skillet, cook sausage over medium-high heat, breaking it up, until browned and cooked through, about 5 minutes. Drain excess fat. Add to the onions and let cool slightly.
Stir mozzarella, ricotta, Parmesan, and parsley into the sausage-onion mixture.
Divide pizza dough into 4 equal pieces. On a floured surface, roll each piece into an 8-inch circle.
Place 1/4 of the filling on one half of each dough circle, leaving a 1-inch border. Brush edges with beaten egg, then fold dough over filling and press edges to seal. Crimp with a fork.
Place calzones on prepared baking sheet. Brush tops with remaining beaten egg and cut a few small slits for steam vents.
Bake until golden brown, about 15-18 minutes. Let cool for 5 minutes before serving.
Tips
Serve with warm marinara sauce for dipping.
Calzones can be refrigerated for up to 3 days; reheat in a 350°F oven.
For extra flavor, add a pinch of red pepper flakes to the filling.
