Ingredients
1 tbsp olive oil
1 lb Italian sausage (mild or spicy), casings removed
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 cup brown or green lentils, rinsed
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 tsp dried thyme
1 bay leaf
Salt and black pepper to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a large pot over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned, about 5 minutes. Transfer to a plate.
In the same pot, add onion, carrots, and celery. Cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Stir in lentils, chicken broth, diced tomatoes (with juices), thyme, and bay leaf. Bring to a boil.
Reduce heat to low, cover, and simmer for 25 minutes.
Return sausage to the pot. Simmer uncovered for 10-15 minutes, until lentils are tender and stew has thickened.
Remove bay leaf. Season with salt and pepper to taste. Garnish with parsley before serving.
Tips
Serve with crusty bread or over rice.
Store leftovers in the refrigerator for up to 4 days; the stew thickens as it sits, so add a splash of broth when reheating.
For a vegetarian version, omit sausage and use vegetable broth.
