Ingredients
1 tbsp olive oil
1 lb Italian sausage (mild or spicy), casings removed
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 cup green lentils, rinsed
1 can (14.5 oz) diced tomatoes
6 cups chicken broth
1 tsp dried oregano
1 tsp dried basil
Salt and black pepper to taste
2 cups fresh spinach (optional)
Grated Parmesan cheese for serving
Instructions
Heat olive oil in a large pot over medium-high heat. Add sausage and cook, breaking it up, until browned, about 5 minutes. Remove with a slotted spoon and set aside.
Add onion, carrots, and celery to the pot; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Stir in lentils, diced tomatoes (with juices), chicken broth, oregano, and basil. Bring to a boil, then reduce heat to low, cover, and simmer until lentils are tender, about 30 minutes.
Return cooked sausage to the pot. If using spinach, stir in and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
Ladle into bowls and top with grated Parmesan cheese.
Tips
Use spicy sausage for extra heat.
Soup thickens upon standing; thin with extra broth if desired.
Store leftovers in the refrigerator for up to 4 days.
