Ingredients
1 lb ground breakfast sausage
1 tbsp butter
1 small onion, diced
1/2 green bell pepper, diced
12 large eggs
1 cup milk
1/2 tsp salt
1/4 tsp black pepper
2 cups shredded cheddar cheese
6 slices bread, cubed (about 4 cups)
Instructions
Preheat oven to 350°F. Grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook sausage until browned, breaking it up. Remove with a slotted spoon and drain on paper towels.
In the same skillet, melt butter and sauté onion and bell pepper until softened, about 3 minutes. Remove from heat.
In a large bowl, whisk eggs, milk, salt, and pepper until well combined. Stir in cooked sausage, sautéed vegetables, 1 1/2 cups cheese, and bread cubes. Pour into prepared dish and top with remaining 1/2 cup cheese.
Bake for 40-45 minutes, until set and golden on top. Let rest 5 minutes before serving.
Tips
For make-ahead: assemble casserole the night before, cover, and refrigerate. Bake as directed, adding 10 minutes to cook time.
