Ingredients
4 frozen or refrigerated buttermilk biscuits (or homemade)
4 pork sausage patties
4 large eggs
2 tablespoons butter
4 slices cheddar cheese (optional)

Instructions
Preheat oven and bake biscuits according to package directions (or prepare homemade biscuits).
While biscuits bake, cook sausage patties in a large skillet over medium heat until browned and cooked through, about 4-5 minutes per side. Transfer to a plate and keep warm.
Reduce heat to medium-low. Add butter to the skillet. Crack eggs into the skillet, being careful not to break yolks. Season with salt and pepper. Cook until whites are set and yolks are still runny, about 3 minutes, or to desired doneness.
Split warm biscuits in half. Place a sausage patty on each biscuit bottom, then top with a fried egg and a slice of cheese if using. Cover with biscuit tops.
