Ingredients
1 lb hot or sweet Italian sausage links
1 bunch broccoli rabe (about 1 lb), trimmed and cut into 2-inch pieces
3 tbsp olive oil
4 cloves garlic, thinly sliced
1/4 tsp red pepper flakes (optional)
1/4 cup chicken or vegetable broth
Salt and black pepper to taste
4 Italian rolls or hoagie buns, split and lightly toasted
1/4 cup grated Pecorino Romano cheese
Instructions
Bring a large pot of salted water to a boil. Add broccoli rabe and blanch for 2 minutes. Drain and set aside.
In a large skillet over medium heat, add 1 tbsp olive oil. Add sausage links and cook, turning occasionally, until browned and cooked through, about 12-15 minutes. Transfer to a plate and slice into 1/2-inch thick pieces.
Add remaining 2 tbsp olive oil to the skillet. Add garlic and red pepper flakes; cook until fragrant, about 30 seconds. Add blanched broccoli rabe and broth. Cook, stirring, until broccoli rabe is tender and liquid is mostly evaporated, about 5 minutes. Season with salt and pepper.
Return sliced sausage to the skillet and toss to combine. Cook for 1-2 minutes to heat through.
Divide the sausage and broccoli rabe mixture among the toasted rolls. Sprinkle with Pecorino Romano cheese and serve immediately.
Tips
To reduce bitterness, blanch broccoli rabe in salted boiling water before sautéing.
Sandwiches can be assembled ahead and reheated in a 350°F oven for 10 minutes.
