Ingredients
1 tbsp olive oil
8 pork sausages (about 400g)
1 onion, chopped
2 garlic cloves, minced
2 carrots, diced
2 celery sticks, diced
1 red bell pepper, diced
400g can chopped tomatoes
400g can cannellini beans, drained and rinsed
400g can kidney beans, drained and rinsed
1 tsp dried thyme
1 tsp smoked paprika
500ml chicken or vegetable stock
salt and pepper to taste
Instructions
Heat olive oil in a large casserole pot over medium-high heat. Add sausages and cook until browned on all sides, about 5 minutes. Remove and set aside.
In the same pot, add onion, garlic, carrots, celery, and bell pepper. Cook until softened, about 5 minutes.
Stir in chopped tomatoes, cannellini beans, kidney beans, thyme, smoked paprika, and stock. Bring to a simmer.
Return sausages to the pot. Cover and simmer on low heat for 30 minutes, stirring occasionally.
Uncover and cook for another 10 minutes to thicken the sauce. Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley if desired.
