In a bowl, mix soy sauce, coconut milk, brown sugar, lime juice, turmeric, coriander, and salt to make the marinade.
Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
Meanwhile, make the peanut sauce: In a small saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and sriracha. Whisk until smooth and heated through. Add water to reach desired consistency. Set aside.
