- 4 medium potatoes, boiled and mashed

- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 medium onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder
- 1 tablespoon lemon juice
- Salt to taste
- 2 tablespoons chopped fresh cilantro
Instructions
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds; let them splutter.
- Add chopped onion and green chilies; sauté until onion turns golden.
- Add ginger-garlic paste and cook for 1 minute until fragrant.
- Add turmeric, coriander, garam masala, and red chili powder. Stir well.
- Add peas and cook for 2-3 minutes.
- Add mashed potatoes, salt, and lemon juice. Mix thoroughly and cook for 2-3 minutes.
- Remove from heat, stir in cilantro. Let cool completely before using as samosa filling.
