Ingredients
2 cups cooked and cooled jasmine rice (preferably day-old)
2 tablespoons vegetable oil
2 cloves garlic, minced
1 shallot, thinly sliced
1 red bird's eye chili, sliced (optional, for extra heat)
2 tablespoons sambal oelek
1 teaspoon shrimp paste (terasi), toasted and crumbled
1 tablespoon kecap manis (sweet soy sauce)
1 teaspoon soy sauce
1/2 teaspoon salt
1/4 teaspoon white pepper
1 egg, fried sunny-side up (for serving)
1/4 cup sliced cucumber (for serving)
1/4 cup sliced tomato (for serving)
1 tablespoon fried shallots (for garnish)
Instructions
Heat vegetable oil in a wok or large skillet over high heat. Add garlic, shallot, and bird's eye chili (if using), and stir-fry for 30 seconds until fragrant.
Add sambal oelek and shrimp paste, and stir-fry for another 30 seconds to combine.
Add the cold rice, breaking up any clumps. Stir-fry for 2-3 minutes, ensuring the rice is well coated with the sambal mixture.
Add kecap manis, soy sauce, salt, and white pepper. Continue stir-frying for 2-3 minutes until the rice is heated through and slightly caramelized.
Taste and adjust seasoning if needed. Serve hot, topped with a fried egg, cucumber, tomato, and fried shallots.
Tips
Use day-old rice for best texture; freshly cooked rice can be too sticky.
