Ingredients
40 saltine crackers (about 1 sleeve)
1 cup unsalted butter (2 sticks)
1 cup packed light brown sugar
1 teaspoon vanilla extract
1 1/2 cups semisweet chocolate chips
1/2 cup chopped pecans or walnuts (optional)
Instructions
Preheat oven to 400°F (200°C). Line a 10x15-inch jelly roll pan with aluminum foil and lightly spray with nonstick cooking spray.
Arrange saltine crackers in a single layer on the prepared pan, salt side up, breaking pieces to fill gaps if needed.
In a medium saucepan, combine butter and brown sugar. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil for 3 minutes without stirring.
Remove from heat and stir in vanilla. Pour the toffee mixture evenly over the crackers, spreading with a spatula.
Bake for 5-7 minutes, until the toffee is bubbling. Remove from oven and immediately sprinkle chocolate chips over the top. Let sit for 2-3 minutes until melted, then spread chocolate evenly.
If using, sprinkle chopped nuts over the chocolate. Refrigerate for at least 1 hour until set. Break into pieces to serve.
