Ingredients
2 lbs chicken wings, separated into drumettes and flats
1 tbsp Shaoxing wine (or dry sherry)
1 tbsp soy sauce
1 tsp salt
1/2 tsp white pepper
1/2 cup cornstarch
Vegetable oil, for deep frying
2 tbsp unsalted butter
4 cloves garlic, minced
2 red chili peppers, thinly sliced (optional)
1 tsp Sichuan peppercorns, ground (optional)
1/2 tsp black pepper, freshly ground
1/2 tsp salt, or to taste
2 green onions, sliced
Instructions
In a large bowl, combine chicken wings, Shaoxing wine, soy sauce, 1 tsp salt, and white pepper. Marinate for at least 20 minutes.
Drain excess liquid from wings. Add cornstarch and toss until evenly coated.
Heat oil in a deep pot to 350°F (175°C). Fry wings in batches for 8-10 minutes until golden and cooked through. Drain on paper towels.
In a large skillet, melt butter over medium heat. Add garlic, chili peppers, and Sichuan peppercorns (if using). Cook until fragrant, about 1 minute.
Add fried wings, black pepper, and remaining salt. Toss to coat evenly.
Garnish with green onions and serve immediately.
Tips
For extra crispiness, double-fry the wings: fry once at 325°F for 5 minutes, then again at 375°F for 3 minutes.
Adjust the amount of chili and Sichuan peppercorn to your spice preference.
Serve with a side of sweet chili sauce or ranch dressing for dipping.
