Ingredients
1 lb tomatillos, husked and rinsed
1/2 cup fresh cilantro leaves
1/4 cup chopped white onion
2 cloves garlic
1-2 serrano chiles, stemmed (adjust to taste)
1/2 teaspoon salt, or to taste
1/4 cup water
Instructions
Place tomatillos in a medium saucepan and cover with water. Bring to a boil, then reduce heat and simmer until tomatillos are soft and have changed color, about 5-7 minutes.
Drain tomatillos and transfer to a blender. Add cilantro, onion, garlic, chiles, salt, and water. Blend until smooth.
Taste and adjust seasoning or heat level. If too thick, add a little more water. Let cool to room temperature before serving.
Tips
Store in an airtight container in the refrigerator for up to 5 days.
For a smoky flavor, broil the tomatillos and chiles until charred before blending.
