Ingredients
1 (14.75 oz) can salmon, drained and flaked
1/2 cup panko breadcrumbs
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1 large egg, lightly beaten
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup vegetable oil for frying
Instructions
In a large bowl, combine flaked salmon, panko, onion, celery, egg, mayonnaise, mustard, lemon juice, salt, and pepper. Mix until well combined.
Shape the mixture into 8 patties, about 1/2 inch thick.
Heat oil in a large skillet over medium-high heat. Carefully place patties in the skillet, working in batches if needed.
Cook for 3-4 minutes per side, until golden brown and crispy. Drain on paper towels.
Serve warm with lemon wedges or tartar sauce.
Tips
Chill the patties for 15 minutes before frying to help them hold their shape.
Leftover croquettes can be reheated in a 350°F oven for 5-7 minutes.
