Ingredients
2 cans (14.75 oz each) pink salmon, drained and flaked
1/2 cup panko breadcrumbs
1/4 cup mayonnaise
1 large egg, lightly beaten
2 tablespoons Dijon mustard
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped green onion
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil, for frying
Instructions
In a large bowl, combine flaked salmon, panko, mayonnaise, egg, mustard, parsley, green onion, lemon juice, salt, and pepper. Mix until well combined.
Shape the mixture into 8 patties, about 1/2 inch thick. Place on a plate and refrigerate for 10 minutes to firm up.
Heat olive oil in a large nonstick skillet over medium heat. Cook patties in batches, 3-4 minutes per side, until golden brown and heated through.
Transfer to a paper towel-lined plate to drain. Serve warm with lemon wedges or tartar sauce.
Tips
For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs.
