Ingredients
1 lb fresh salmon fillet, skin removed and finely chopped (or 2 cans (14.75 oz each) salmon, drained and flaked)
1/2 cup panko breadcrumbs
1/4 cup finely chopped red onion
2 tablespoons chopped fresh parsley
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 large egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil (for cooking)
Instructions
In a large bowl, combine the salmon, panko, red onion, parsley, mustard, lemon juice, egg, salt, and pepper. Mix gently until just combined.
Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick. Place on a plate and refrigerate for 15 minutes (this helps them hold together).
Heat olive oil in a large nonstick skillet over medium heat. Cook the patties until golden brown and cooked through, about 4 minutes per side.
Serve on buns with desired toppings such as lettuce, tomato, red onion, and tartar sauce or a dollop of yogurt-dill sauce.
Tips
For best results, use fresh salmon and chop it finely rather than grinding.
If using canned salmon, remove any skin and bones before flaking.
