Ingredients

Instructions

  1. Line an 8x8 inch baking dish with parchment paper and lightly oil the paper.
  2. In a medium saucepan, combine sugar, corn syrup, and water. Heat over medium heat, stirring until sugar dissolves.
  3. Bring to a boil and cook without stirring until the mixture reaches 260°F (hard ball stage) on a candy thermometer.
  4. Remove from heat and stir in butter, heavy cream, black licorice extract, ammonium chloride powder, and salt until smooth.
  5. Pour the mixture into the prepared baking dish. Let cool at room temperature for about 2 hours until set but still pliable.
  6. Dust a work surface with cornstarch. Turn the candy out onto the surface and dust the top with more cornstarch.
  7. Roll the candy into a 1/2-inch thick sheet. Cut into small squares or use a knife to cut into strips.
  8. If desired, roll each piece into a rope shape and cut into bite-sized pieces. Dust with additional cornstarch to prevent sticking.
  9. Store in an airtight container at room temperature for up to 2 weeks.
