Ingredients
4 large eggs
8 oz green beans, trimmed
1 lb new potatoes, halved
2 (5 oz) cans tuna in olive oil, drained
1 cup cherry tomatoes, halved
1/2 cup Niçoise olives
4 cups mixed salad greens
1/4 cup extra-virgin olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
Salt and pepper to taste
Instructions
Place eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 9 minutes. Transfer to ice water, peel, and quarter.
Bring a pot of salted water to a boil. Add green beans and cook for 3 minutes. Remove with a slotted spoon and plunge into ice water. Drain.
Add potatoes to the same boiling water and cook until tender, about 10 minutes. Drain and let cool slightly.
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
Arrange salad greens on a large platter. Top with green beans, potatoes, tuna, cherry tomatoes, olives, and eggs.
Drizzle with vinaigrette and serve immediately.

Use high-quality tuna packed in olive oil for best flavor.
Blanching the green beans and potatoes keeps them crisp-tender.
The salad can be assembled ahead, but add dressing just before serving.
