Ingredients
1/2 cup (1 stick) unsalted butter
12-15 fresh sage leaves
1 tablespoon fresh lemon juice
Salt to taste
Freshly ground black pepper to taste
Instructions
Cut the butter into pieces and place in a light-colored skillet or saucepan over medium heat.
Cook, swirling occasionally, until the butter melts, foams, and then the foam subsides and the milk solids turn golden brown with a nutty aroma, about 5-7 minutes.
Add the sage leaves and cook for 30-60 seconds until they become crisp but not burnt.
Remove from heat and stir in lemon juice, salt, and pepper. Serve immediately.
Tips
Use a light-colored pan to easily monitor the browning of the butter.
For extra flavor, add a clove of crushed garlic along with the sage.
