Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
1 (10 oz) bag mini marshmallows
1 1/2 cups semisweet chocolate chips
1/2 cup heavy cream
Instructions
Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the prepared pan.
Spread mini marshmallows evenly over the crust.
In a small saucepan, heat chocolate chips and heavy cream over low heat, stirring constantly until smooth and melted.
Pour chocolate mixture over the marshmallows, spreading evenly.
Refrigerate for at least 2 hours, until firm. Lift out using parchment paper and cut into 16 bars.
Tips
For a toasted marshmallow flavor, briefly broil the marshmallows before adding the chocolate layer.
Store bars in an airtight container in the refrigerator for up to 1 week.
Let bars sit at room temperature for 5 minutes before serving for easier cutting.
