Ingredients
- 2.5 lbs boneless pork shoulder or loin
- 1/2 cup dark rum
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons ketchup
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1/2 cup chicken broth
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix rum, brown sugar, soy sauce, ketchup, garlic, ginger, and pepper to make the glaze.
- Heat oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side.
- Pour the glaze over the pork. Add chicken broth to the skillet.
- Transfer skillet to the oven. Roast for 1.5 hours, basting every 20 minutes with pan juices, until internal temperature reaches 145°F (63°C).
- Remove pork from skillet and let rest 10 minutes. Skim fat from pan juices and simmer on stovetop until thickened, about 5 minutes.
- Slice pork and serve with the glaze spooned over.
