Ingredients
400g (14 oz) dark chocolate, chopped
100g (3.5 oz) unsalted butter, cubed
2 tbsp golden syrup or corn syrup
200g (7 oz) digestive biscuits or graham crackers, broken into small pieces
150g (5.3 oz) mini marshmallows
100g (3.5 oz) roasted almonds, roughly chopped
100g (3.5 oz) dried cranberries or cherries (optional)
Instructions
Line an 8x8 inch (20x20 cm) square baking pan with parchment paper, leaving overhang on two sides.
Place chopped chocolate, butter, and golden syrup in a heatproof bowl set over a pan of gently simmering water (ensure bowl doesn't touch water). Stir until melted and smooth. Remove from heat.
Add broken biscuits, marshmallows, almonds, and dried fruit (if using) to the chocolate mixture. Fold gently until everything is evenly coated.
Transfer mixture to the prepared pan and press down firmly into an even layer using a spatula or your hands (lightly greased).
Refrigerate for at least 2 hours, or until firm. Once set, lift out using parchment overhang and cut into 16 bars.

Store in an airtight container in the refrigerator for up to 2 weeks.
For a vegan version, use dairy-free chocolate and butter substitute.
Feel free to substitute almonds with peanuts or walnuts.
