  2. Bring mixture to a boil without stirring. Insert a candy thermometer and cook until temperature reaches 300°F (hard crack stage).
  3. Remove from heat and let cool for 5 minutes. Stir in flavoring extract and food coloring if using.
  4. While mixture cools, prepare skewers by wetting them lightly and rolling in granulated sugar (this helps crystals form). Let dry.
  5. Pour the hot syrup into a heatproof glass measuring cup or jar. Allow to cool to about 200°F.
  6. Place the sugared skewers into the syrup, using clothespins to hold them upright and centered, not touching the sides or bottom.
  7. Let the syrup cool undisturbed at room temperature for 7-14 days until crystals form and grow on the skewers.
  8. Once crystals have formed to desired size, remove skewers and let drain on a wire rack. Store in an airtight container.
