Ingredients
2 lb boneless pork loin roast
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme leaves
1 tbsp fresh sage, chopped
1 tsp salt
1/2 tsp black pepper
Instructions
Preheat oven to 375°F (190°C).
In a small bowl, combine olive oil, garlic, rosemary, thyme, sage, salt, and pepper to form a paste.
Pat pork loin dry with paper towels. Rub the herb paste all over the pork.
Place pork on a rack in a roasting pan, fat side up.
Roast for 50-60 minutes, or until internal temperature reaches 145°F (63°C) for medium.
Remove from oven, tent with foil, and let rest for 10 minutes before slicing.
Slice and serve with pan juices.
