  4. Heat an ovenproof skillet over high heat. Sear the lamb loins for 2 minutes per side until browned.
  5. Transfer the skillet to the oven and roast for 15-20 minutes for medium-rare (internal temp 135°F/57°C) or longer to desired doneness.
  6. Remove lamb from skillet and let rest for 5 minutes. Meanwhile, place skillet over medium heat, add wine, and deglaze, scraping up browned bits. Simmer for 2 minutes to reduce slightly.
  7. Slice lamb into medallions and drizzle with pan juices.
