Ingredients
3 whole heads garlic
2 tablespoons olive oil
1/4 cup cream cheese, softened
2 tablespoons unsalted butter, softened
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley (optional)
Instructions
Preheat oven to 400°F (200°C). Cut off the top 1/4 inch of each garlic head to expose the cloves. Place each head on a piece of aluminum foil, drizzle with olive oil, and wrap tightly.
Roast for 40-45 minutes until cloves are soft and golden. Let cool slightly.
Squeeze the roasted garlic cloves out of their skins into a bowl. Mash with a fork.
Add cream cheese, butter, salt, pepper, and lemon juice. Mix until smooth and well combined.
Stir in parsley if using. Taste and adjust seasoning.
Transfer to a serving dish. Serve warm or at room temperature.
