Ingredients
2 large fennel bulbs (about 1 1/2 lbs total)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Trim the fennel bulbs: cut off the stalks and feathery fronds (reserve fronds for garnish if desired). Remove any tough outer layers. Cut each bulb in half through the root, then cut each half into 3-4 wedges, keeping the root end intact to hold wedges together.
In a large bowl, toss fennel wedges with olive oil, salt, and pepper until well coated.
Arrange fennel wedges in a single layer on the prepared baking sheet, cut sides down. Roast for 15 minutes.
Flip fennel wedges over. Sprinkle evenly with Parmesan cheese.
Return to oven and roast for another 12-15 minutes, until fennel is tender and cheese is golden and bubbly.
Optional: Garnish with chopped parsley or reserved fennel fronds before serving.
Tips
For extra flavor, add a squeeze of lemon juice before serving.
Leftovers can be reheated in a 350°F oven for 5-10 minutes.
