Ingredients
1 large head cauliflower, cut into florets
3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup tahini
2 tablespoons lemon juice
2 tablespoons water
1 clove garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro
2 tablespoons toasted pine nuts or slivered almonds
Instructions
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, toss cauliflower florets with olive oil, salt, and pepper until evenly coated.
Spread cauliflower in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway, until golden brown and tender.
While cauliflower roasts, make the tahini sauce: In a small bowl, whisk together tahini, lemon juice, water, and minced garlic until smooth. If too thick, add more water 1 teaspoon at a time.
Transfer roasted cauliflower to a serving platter. Drizzle with tahini sauce, then sprinkle with parsley, cilantro, and pine nuts. Serve warm or at room temperature.
