  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper to form a paste.
  3. Pat pork loin dry with paper towels. Rub the herb paste all over the pork.
  4. Place pork loin fat-side up in a roasting pan. Pour chicken broth into the pan (not over the pork).
  5. Roast for 50-60 minutes, or until internal temperature reaches 145°F (63°C) when measured with a meat thermometer.
  6. Remove from oven, tent with foil, and let rest for 10 minutes before slicing.
