Ingredients
1 whole chicken (about 4-5 lbs)
2 tablespoons olive oil
1 lemon, halved
4 cloves garlic, smashed
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 tablespoon fresh sage, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels.
In a small bowl, mix olive oil, rosemary, thyme, sage, salt, and pepper.
Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
Place the lemon halves and smashed garlic cloves inside the cavity.
Tie the legs together with kitchen twine and tuck the wing tips under the body.
Place the chicken breast-side up on a rack in a roasting pan.
Roast for 15 minutes, then reduce oven temperature to 375°F (190°C) and continue roasting for about 60 minutes, or until the internal temperature reaches 165°F (74°C) in the thigh.
Let the chicken rest for 10-15 minutes before carving.
Tips
For extra crispy skin, let the chicken air-dry in the refrigerator uncovered for a few hours before roasting.
