- 4 (6-inch) hoagie rolls, split
- 2 tablespoons olive oil
- 1 pound thinly sliced roast beef
- 8 slices provolone cheese
- 1/2 cup giardiniera (pickled vegetable mix), drained
- 1/4 cup mayonnaise
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Brush the cut sides of the hoagie rolls with olive oil and place on a baking sheet. Toast in the oven for 3-4 minutes until lightly golden.
- In a small bowl, mix mayonnaise, red wine vinegar, oregano, salt, and pepper to make a dressing.
- Layer roast beef evenly on the bottom half of each roll, folding the slices to fit. Top with provolone cheese slices.
- Place the sandwiches on the baking sheet and return to the oven for 2-3 minutes until the cheese is melted.
- Remove from oven and spread the mayonnaise dressing on the top half of each roll. Add giardiniera on top of the cheese.
- Close the sandwiches, press gently, and serve immediately.
