1 cup rice bran
1 cup all-purpose flour
1/2 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup buttermilk
1/3 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/2 cup raisins or chopped nuts (optional)
Instructions
Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease lightly.
In a large bowl, whisk together rice bran, flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
In a separate bowl, whisk together buttermilk, oil, egg, and vanilla until smooth.
Pour wet ingredients into dry ingredients and stir until just combined. Fold in raisins or nuts if using. Do not overmix.
Divide batter evenly among muffin cups, filling each about 2/3 full.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
