Ingredients
2 (12-ounce) ribeye steaks, about 1 inch thick
4 tablespoons unsalted butter, softened
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 teaspoon fresh thyme leaves
1 teaspoon fresh rosemary, chopped
Salt and freshly ground black pepper to taste
1 tablespoon olive oil
Instructions
Remove steaks from refrigerator 30 minutes before cooking to bring to room temperature. Pat dry with paper towels and season generously with salt and pepper.
In a small bowl, combine softened butter, minced garlic, parsley, thyme, and rosemary. Mix well, then form into a log on plastic wrap, roll tightly, and refrigerate until firm.
Heat olive oil in a cast-iron skillet over high heat until smoking. Place steaks in skillet and cook without moving for 4 minutes for medium-rare, or until a golden crust forms. Flip and cook another 4 minutes for medium-rare, or to desired doneness.
Remove steaks from skillet and let rest for 5 minutes. Top each steak with a slice of the garlic herb butter and serve immediately.
Tips
For best results, use a meat thermometer: 130°F for medium-rare, 140°F for medium.
Leftover butter can be stored in the refrigerator for up to a week and used on other meats or vegetables.
