A fun, no-fish twist on sushi using smoked sausage, cream cheese, and pickles rolled in a tortilla instead of nori. Perfect for parties or a quick snack.

Ingredients
4 large flour tortillas (10-inch)
8 oz cream cheese, softened
1 lb smoked sausage (like kielbasa), cut into 4 long strips
4 dill pickle spears, patted dry
1 cup shredded cheddar cheese
2 tbsp yellow mustard (optional)
Instructions
Lay a tortilla flat and spread 2 oz cream cheese evenly over the entire surface.
Place one strip of smoked sausage along the edge of the tortilla, then place a pickle spear next to it.
Sprinkle 1/4 cup shredded cheddar cheese over the cream cheese, and drizzle with 1/2 tbsp mustard if desired.
Roll the tortilla tightly around the fillings, tucking in the sides as you go to form a tight log.
Repeat with remaining tortillas and fillings.
Wrap each roll in plastic wrap and refrigerate for at least 30 minutes to firm up.
Unwrap and slice each roll into 1-inch pinwheels. Serve cold or at room temperature.
Tips
For extra flavor, add a thin layer of ranch dressing or hot sauce before rolling.
Store leftovers in an airtight container in the fridge for up to 2 days.
