Ingredients
1 cup red rice, rinsed
8 cups water or vegetable broth
1 teaspoon salt
1 tablespoon ginger, minced
2 green onions, sliced
1 tablespoon sesame oil
Optional toppings: soy sauce, fried shallots, cilantro, chili oil
Instructions
In a large pot, combine the rinsed red rice and water or broth. Bring to a boil over high heat.
Reduce heat to low, add salt and ginger, and stir. Cover and simmer for 50-60 minutes, stirring occasionally to prevent sticking, until the rice is broken down and the congee is thick and creamy.
Remove from heat. Stir in sesame oil and adjust salt to taste.
Ladle into bowls and top with sliced green onions and any additional toppings as desired.
Tips
For a thinner congee, add more water or broth during cooking.
Leftover congee can be stored in the refrigerator for up to 3 days; thin with water when reheating.
