Ingredients
4 cups chicken or vegetable broth
2 cups water
2 tablespoons soy sauce
1 tablespoon miso paste
1 teaspoon sesame oil
2 cloves garlic, minced
1 tablespoon grated fresh ginger
4 packs (3 oz each) instant ramen noodles (discard seasoning)
4 soft-boiled eggs, halved
2 green onions, sliced
1 cup sliced shiitake mushrooms
1 cup baby spinach
1 sheet nori, torn into pieces
Instructions
In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
Add broth, water, soy sauce, and miso paste. Whisk to dissolve miso. Bring to a boil, then reduce heat and simmer for 15 minutes.
Add mushrooms and spinach to the broth, cook for 2-3 minutes until spinach wilts.
Meanwhile, cook ramen noodles according to package directions, but drain and set aside (do not overcook).
Divide noodles among 4 bowls. Ladle hot broth over noodles.
Top each bowl with a soft-boiled egg half, green onions, and nori pieces. Serve immediately.
Tips
For extra flavor, add a splash of mirin or a teaspoon of chili oil.
To make soft-boiled eggs, boil eggs for 6-7 minutes, then transfer to ice water.
