  2. Peel off the charred skin from the peppers, remove stems and seeds, and slice into 1/2-inch wide strips (rajas).
  3. Heat oil in a large skillet over medium heat. Add onion and cook until softened and translucent, about 3-4 minutes. Add garlic and cook for 1 minute more.
  4. Add the poblano strips to the skillet and cook for 2-3 minutes, stirring occasionally.
  5. Reduce heat to low, stir in the crema and cheese, and cook until the sauce is heated through and slightly thickened, about 2-3 minutes. Season with salt to taste.
  6. Garnish with fresh cilantro if desired and serve warm.
