Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken and cook until browned, about 5 minutes. Remove and set aside.
- Add onion, carrots, and celery to the pot; cook until softened, about 5 minutes. Add garlic and cook 1 minute.
- Return chicken to pot. Add broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer 10 minutes.
- Meanwhile, make dumplings: In a bowl, whisk flour, baking powder, and salt. Stir in milk and melted butter until just combined.
- Stir peas and heavy cream into the pot. Drop dumpling batter by spoonfuls onto the simmering stew. Cover and cook 15 minutes (do not lift lid).
